About the Position This position is primarily responsible for providing direction and leadership to the front of the house, catering and assisting with the implementation of TVA's self-directed dining program.
Incumbent responsible for maintaining high standards in service, resident relations, costs controls, staffing, safety, sanitation, training and special functions.
Incumbent is also responsible for recording, reporting, and maintaining all operational and sales stats for the Dining Room and catered events.
Duties Directly responsible for front of the house, catering, and revenue generating operations for all Dining Service venues within TVA.
Directs departmental activities (e.
g.
meal service, food production, catering activities, tray service, and merchandising).
Manages employees within the framework of teamwork and empowerment.
Circulates in dining areas and on health care and assisted living floors during meal periods to hear and respond to resident and guest comments pertaining to service and food quality.
Trains staff in customer service, proper portioning, cashier skills as well as safety and sanitation.
Sustains standards by tracking and documenting measurable KPIs Manages the scheduling and job duties of front of the house, and oversees payroll.
Responsible for interviewing, hiring, orienting, training, evaluating and counseling of all staff.
Assists in the predicting, planning, monitoring, evaluation of cost programs, daily purchasing and maintenance of food preparation system, order book, recipe file, inventory, and storerooms, as assigned.
Conducts team meetings.
Participates in menu planning, writing and advertising.
Uses proper methods for food handling/infection control when managing and producing items.
Qualifications Minimum of five (3) years food service management; experience with retail or upscale dining experience a plus.
Experience in retirement living food management is a plus.
Must have solid understanding of cash handling and tracking procedures.
ServSafe Food Manager certification.
Must have solid experience with financial management.
Must have experience with training and development of front-line staff.
Experience working with multi-level management teams is a plus.
Proficiency in Microsoft Excel, Word, Power Point and Publisher is a must.
